Make and chill the butter block - 10 + 15 minutes. Laminate the dough - 10 minutes. First fold, then chill the dough - 10 + 20 minutes. Second fold, then chill the dough - 10 + 20 minutes. Third fold, then chill the dough - 10 + 2 hours (up to 48 hours) Prepare cream cheese - 10 minutes.
Using a sharp knife, pastry wheel, or pizza cutter, cut 10 slanting strips along both sides. Fold strips over dough, alternating each side to resemble a twist or a braid. Fold the bottom end up to seal the filling inside. Repeat with 2nd half of dough and remaining raspberry filling. Brush with egg wash.

Spoon about a heaped teaspoon of ricotta mixture in the center of each puff pastry square. Take one corner of the square and fold it towards the center. Repeat with every other corner/tip to form a pinwheel shape. Secure the center with a blueberry by pressing it down. Repeat with the rest of them.
Instructions. Preheat the oven to 400℉/205℃. In a small bowl, mix together the soft cream cheese, sugar and vanilla with a spoon or small rubber spatula. 4 oz full fat cream cheese, 1 ½ tablespoons granulated sugar, 2 teaspoons vanilla extract. Roll out the dough to ⅛"-¼" thick.
